Once the extra virgin oil is infused with the scent, colour and flavour of the chilli, it is filtered through fine muslin and bottled.
The result is a spicy hot extra virgin olive oil which can be used in sauces, stir fries, or any dish which needs a lively hint of warming peperoncino flavour from sunny southern Italy. Chilli lovers prefer to use it neat, as a condiment.
